\nAlcoholic fermentation takes place in steel tanks at a controlled temperature between 16 and 18\u00b0C.
\nEach vineyard is vinified separately from the others and this division is maintained until the spring following the harvest when, after meticulous tasting, the wine from the different vineyards is assembled into a cuv\u00e9e and bottled for the second fermentation.<\/p>\n
