Doc: Sparkling Classic Method Extra Brut
Guided by a passion for our native grape varieties and inspired by our experience with Ceppo 326, we are finally fully expressing the sparkling wine potential of Groppello: for the first time, this native Valtenesi grape, vinified as a white wine and refermented in the bottle for 24 months in our cellar in Raffa, gives rise to the almost experimental uniqueness of our Centopercento Metodo Classico.
Integrity, vivid in its vibrant acidity, and above all elegant, Centopercento is our best interpretation of the classic method.
It should be served at 6°C, excellent as an aperitif, with whitefish risotto and with fried foods.

OUR COMPANY
Founded by Andrea Pasini in 1958 and still family-run today, Pasini San Giovanni, now run by the third generation of winemakers, expresses the distinctive character of the Garda area in every bottle, thanks to its 36 hectares of estate-owned vineyards, spanning the Valtènesi and Lugana regions, on the Brescia shore of Lake Garda. Supported by a photovoltaic system since 2009 and a carbon footprint assessment project, the winery and the entire company management are increasingly moving closer to achieving full sustainability.
The company today has two names, one obviously linked to the Pasini family who created and has always run the company, the other linked to the local toponym where Cascina San Giovanni is located, called the San Giovanni area and linked to the church of San Giovanni located in Palude, a hamlet of Puegnago not far from Raffa.
